This is a another easy recipe that came from fellow Knottie Lindsay. I just so happened to have all the ingredients in the cupboard, because I really didn't want to go to the store! Jim and I thought it was great. We will definitely make this again.
Laughing Cow Chicken
Serves: 2
Ingredients
* 2 chicken breasts, cut in half horizontally 3/4 of the way through (so you can stuff the inside)
* 2 wedges Laughing Cow light cheese (one per breast) (we used garlic herb flavor)
* Italian seasoning to taste
* 1/4 cup dried bread crumbs (I added italian seasoning to the bread crumbs as well)
* Handful grated parmesan cheese
* Cooking spray
Directions
1. Pre-heat oven to 400 degrees.
2. Open each chicken breast up and spread one wedge of Laughing Cow inside the middle. Sprinkle italian seasoning inside to taste. Fold chicken back over to original shape.
3. Mix together bread crumbs and parmesan cheese in a shallow dish. Spray each chicken breast with cooking spray and then dip in bread crumb mixture to coat. Place on baking sheet.
4. Bake for 25-30 minutes or until chicken is cooked through.

And Then There's Sadie!
Sister of Devo with a complete opposite personality. Although she's
shy at first, once she gets to know you she's ready to play.

Fun fact: She loves the automatic ice dispenser. Almost always sends
her charging into the kitchen.

Taco Bake!
So I jumped on the bandwagon from my favorite message board: the Detroit board on the popular wedding website theknot.com. This has been a favorite recipe of many of girls on the board. It originates from one of the lovely knotties here.
An amazing concoction that somehow blends Mexican and Italian. Layers of seashell pasta, cream cheese and sour cream, ground beef mixed with taco seasoning and tomato sauce, all topped off with a layer of shredded cheddar cheese. Bake that sucker at 350 for 30 minutes and deliciousness ensues.
The hubby and I loved it. It is easy to make and makes for some good leftover lunches.
Thanks Lindsay!

Here we go again...
Okay, so far my track records with blogs has been unsuccessful. This is the third attempt. Third times a charm right? This is it. This is everything. Home improvement projects, pictures, recipes, and someday....kids! This is the super blog!
