Really easy to make. I am sick and still managed to drag myself to the chicken to throw it together. I actually prepared it in advance and put it in the fridge. When I got home last night I just popped it in the oven.
2 Boneless Skinless Chicken Breasts
1 can Cream of Mushroom
1 can Cream of Chicken
1 pkg. frozen veggies (I used the broccolli, cauliflower, carrot mix)
1 box Chicken flavor Stovestop Stuffing
Preheat oven to 350.
Slice chicken into chunks. Cook in pan until fully cooked. I added a generous sprinkling of Mrs. Dash type seasonings as well.
Cook Stuffing mix as directed.
In a casserole dish, combine veggies, cream of chicken, cream of mushroom and cooked chicken.
Layer stuffing on top. Bake for 30-40 minutes until stuffing is browned on top and casserole is bubbling.
Easy and tasty!
**UPDATE** Microwaved leftovers not so bad :) And I usually don't like leftovers...

Laughing Cow Chicken
This is a another easy recipe that came from fellow Knottie Lindsay. I just so happened to have all the ingredients in the cupboard, because I really didn't want to go to the store! Jim and I thought it was great. We will definitely make this again.
Laughing Cow Chicken
Serves: 2
Ingredients
* 2 chicken breasts, cut in half horizontally 3/4 of the way through (so you can stuff the inside)
* 2 wedges Laughing Cow light cheese (one per breast) (we used garlic herb flavor)
* Italian seasoning to taste
* 1/4 cup dried bread crumbs (I added italian seasoning to the bread crumbs as well)
* Handful grated parmesan cheese
* Cooking spray
Directions
1. Pre-heat oven to 400 degrees.
2. Open each chicken breast up and spread one wedge of Laughing Cow inside the middle. Sprinkle italian seasoning inside to taste. Fold chicken back over to original shape.
3. Mix together bread crumbs and parmesan cheese in a shallow dish. Spray each chicken breast with cooking spray and then dip in bread crumb mixture to coat. Place on baking sheet.
4. Bake for 25-30 minutes or until chicken is cooked through.
